I recently got an email from one of my blog readers, asking for a healthy slice recipe that everyone in the family could enjoy, but would be good finger food for her toddler.
I think the following recipe will be just the thing. Plus I know I have a following of Grandmas who dot on their grandchildren and only want to feed them the best when they come to stay or be baby sat.
- More Mummy Please
- 1 1/2 cups chopped dried fruit (You select the families favorites – Mix 2-3 kinds)
- 2 cups rolled oats
- 1 cup shredded moist coconut
- 1 cup Rice Krispies (Rice bubbles as known in Aus), crushed
- 225g butter, melted
- 2 tablespoons honey (Raw or Organic Please)
- 1/4 cup Brown sugar
Dried fruits are extremely tasty and are filled with vitamins, minerals and fiber; I have never met a family where everyone does not love them. This is a good way of increasing your family fruit intake. With dried fruits you can eat what is out of season! What could be easier.
Method
Pre-heat oven to 160 Celsius
Combine dried fruit, rolled oats, coconut and Rice Krispies (Bubbles) in a large bowl.
In a Small Saucepan Melt the butter, honey and brown sugar until sugar is dissolved. Add this mixture to dry ingredients and stir until well combined.
Spoon mixture into a 20 x 25cm greased and paper-lined baking tray and press gently with hands to flatten the mixture slightly. Bake for about 35 minutes or until cooked and golden.
Cool and then refrigerate until well chilled, cut into slices (should make around 18) and store in an airtight container.
Special Notes:
(1) As a special treat you can get some carob buttons and melt as you would chocolate and drizzle over each slice.
These are ideal for lunch boxes for the whole family or as a “Finger Food” in between snack for your toddlers and older children.
(2) If you are caring for the elderly this slice is ideal for that sweet treat. If they need extra protein you can add 1 tablespoon of unflavoured Whey Protein Powder to the mix. If this is done please add another 1/2 tablespoon of honey so the mix binds well.
